Producers of baklava, a flaky, multi-layered pastry with walnuts, pistachios and syrup, are pleased with the increase in baklava sales with the advent of the holy month of Ramadan.
Online news portal haberler.com reported on Monday that Deniz Özer, who has been making baklava for 16 years, said baklava is consumed all year long but that the demand for it grows in Ramadan. "Baklava sales have increased by 40 percent. We are working harder and longer during Ramadan to keep up with the increased demand," Özer further stated.
Ramadan has boosted not only sales of baklava but also of other kinds of desserts that are an indispensable part of iftar (fast-breaking dinner) tables. Özer said there has also been an increase in sales of güllaç -- a legendary Ramadan sweet made from wispy layers of pastry, filled with walnuts, pistachios and pomegranate and soaked in a milky syrup, and sütlü nuriye -- another Ramadan sweet similar to baklava but lighter.
