In the gastronomy city of Gaziantep, dessert masters continue to blend traditional flavors with modern interpretations. Following the cold baklava, which has garnered great interest in recent years, 'cold kadayıf' has now been produced. Preferred for its light taste during the summer months and adorned with chocolate, orange, blueberry, raspberry, and strawberry aromas, cold kadayıf is sold for between 800 and 1000 TL per kilogram.
Gaziantep kadayıf master 32-year-old Mehmet Taşçı has produced a "cold kadayıf" with milk and plenty of Antep pistachios, adding an innovative touch to traditional kadayıf. The new product, which appeals to the taste of those seeking light desserts in summer, is known as the first of its kind in Gaziantep and the Southeastern Anatolia Region.
A PRESENTATION RICH IN BOTH VISUAL AND TASTE IS CREATED
In the cold kadayıf developed by kadayıf master Taşçı, traditional shredded kadayıf is prepared with special methods, using a light milk-based mixture instead of classic syrup. The top of the dessert is decorated with plenty of Antep pistachios, chocolate, orange, blueberry, raspberry, and strawberry flavors, creating a presentation rich in both visual and taste.
Mehmet Taşçı stated that they considered the demands of citizens who prefer lighter alternatives instead of heavy syrupy desserts in summer, and said they created a new dessert suitable for modern taste while preserving the essence of traditional kadayıf.
"WE DEVELOPED COLD KADAYIF BECAUSE WE KNEW THE WEATHER WOULD BE HOT"
Taking advantage of the hot weather, Mehmet Taşçı said he developed cold kadayıf, "Cold baklava already exists, it has been around for years. It has become indispensable for summer months. I produced cold kadayıf myself. In fact, I think it turned out better than cold baklava. It is currently in high demand. It has started to become one of the indispensable desserts of summer. Since the weather is very hot this year, we did such a study. Actually, I had been working on this for a long time. We developed cold kadayıf, tried it, worked on it, and finally created it. Everyone who tried it was very satisfied."
"NO ONE EXCEPT ME KNOWS ALL THE DETAILS OF THIS PRODUCT"
Emphasizing that the cold kadayıf they produce is the first in the region as well as in Gaziantep, Taşçı said they struggle to meet the demand from citizens, "Our product also has fruity varieties. We have orange, strawberry, raspberry, blueberry, pistachio, chocolate, and many other varieties. I bring some raw materials from outside the city. I even use ingredients that are not available in Gaziantep. I don't think anyone else knows all the details of this product right now. Particularly, some raw materials we use are not found in this region. Our products have chocolate on top, and there is a special chocolate sauce inside. Young people especially prefer fruity varieties. Our pistachio product is indispensable. In fact, we can barely keep up with the demand for the pistachio variety."

Stating that they kept the price reasonable because they just opened the business, Taşçı said citizens who taste it for the first time are very pleased with the flavor, "Since we just opened, we kept our prices quite reasonable. Our kilogram prices start from 800 lira. They vary between 900 and 1000 TL depending on the product. Our customers are very satisfied. We haven't received any complaints so far. Not many people in Gaziantep know about cold kadayıf yet. Citizens who coincidentally come to our shop first try a portion, then like it and have it packaged to take home. Everyone is very satisfied right now. I think it's definitely an indispensable product. I recommend everyone to come and taste it at least once."

Naturally, interest in baklava decreases during summer months. Because syrupy desserts can be a bit uncomfortable for people in hot weather. Cold kadayıf, on the other hand, is a very light and refreshing dessert for summer months. People want to eat more and more. Since it is a cool dessert, it is completely different from hot syrupy products. All the ingredients we use are first-class. We use pure butter, first-quality Antep pistachios, shelled pistachios, and the best quality chocolates. In short, all our materials are of the highest quality."
