The price of lamb liver, which has increased by 80%, has reached an average of 800 lira per kilogram, while the price of beef liver has reached 450-500 lira per kilogram. Due to the rising prices, liver has almost fallen into the black market, surpassing chops. Tradesmen, who state that they are having difficulty finding liver, are waiting for help from the authorities to solve the problem.

IT HAS SURPASSED CHOPS

Restaurant owner Ali Koçak, who stated that the price of lamb liver has surpassed that of chops, said, "With the arrival of autumn, prices have increased this year as they do every year. But this year, the increase has been a bit more. While we expected a 20-30% increase, it has risen to around 80%. The price of liver has increased from 480 lira to 750-800 lira. 1 kilogram of lamb liver is more expensive than 1 kilogram of chops. Liver has started to become very valuable; consumers should be aware of this and pay attention to what they eat. Beef liver is around 450-480 lira, while lamb liver is around 750-780 lira." he said.

Offal is not keeping up, it has even surpassed chops in price

Koçak stated that the most important difference between beef and lamb liver is the firmness of the meat, saying, "While beef liver is a bit firm, lamb liver crumbles in the mouth like cotton. Fresh liver shines and shows itself. Since there is no import, the lamb liver we bought last month for 480-500 lira is now 750-800 lira this month. Since there is no slaughter, finding liver is almost impossible; it is sold on the black market. We experience this every year, but this year it has been a bit excessive," he said.

Butcher Burhan Sincar stated that despite the stable prices of meat, there has been an astronomical increase in offal prices, saying, "Lamb liver was around 400 lira, while beef liver was around 350 lira. While the price of meat remains the same, offal has increased in price every week. Lamb liver has risen to 750-800 lira. Prices vary according to the neighborhood. Lamb liver is used for kebabs and grilling. Restaurants use beef liver. Beef liver is preferred for home cooking. You can't make sauté or grill from beef liver, but you can make everything from lamb." he said.
