The season for madımak, which is the subject of poems and folk songs in Sivas, has opened. The kilogram of madımak, which women collect with great effort and turn into various dishes, is sold for 200 TL in the market.
The season for madımak, an indispensable flavor on tables in Sivas and surrounding provinces, has opened. With the melting of snow and the greening of nature, women have taken to the pastures to begin harvesting madımak. Madımak, which grows spontaneously in nature and is used in various dishes, is carefully selected from among wild weeds and collected one by one with the help of razor blades. Madımak, whose collection is quite laborious, is sold for 200 TL per kilogram at the market.
COLLECTED ONE BY ONE WITH RAZOR BLADES
Women gathering in Sivas for the madımak harvest both collect madımak and sing madımak folk songs. Stating that they love all dishes made with madımak, the women from Sivas said, "It is made into a mıhlama with eggs and roasting, which I really enjoy. I love its soup. While collecting, we pay attention to picking it cleanly. Collecting it is enjoyable; it feels like medicine, and I feel good. Primarily, it is a very beneficial product for the intestines. We collect it every year, cook its meals, dry it, and make preserves. Our relatives abroad ask for it, and we send it to them. Madımak bulgur soup is made, and mıhlama is made; it is a good, beneficial, and delicious product."
TOOK ITS PLACE ON STALLS
With the opening of the madımak season in Sivas, madımak has also taken its place on market stalls. Those who do not want to endure the trouble of collecting it can obtain it for 200 TL per kilogram. Market vendor Ethem Yıldız stated that sales will increase with the arrival of expatriates and said, "Previously, madımak appeared in April, but due to air temperatures, it has been pushed back a year and now appears in May. We have been selling it for a week; we bring madımak to our market stall as it is collected. Since expatriate citizens have not arrived, there isn't much demand, but in the coming days, there will be great demand for madımak. We start every year in these months, and our sales continue until mid-June. Despite it being new, there is quite good demand, but this interest will certainly increase."
