The production of saffron, which is just beginning to be recognized in Thrace, requires intense labor, as only 3 threads of stigma are obtained from each flower. For this reason, sales are made per gram. A maximum of 3 kilograms of saffron can be harvested from a 7-decare plot, and it is used in many sectors, from gastronomy to cosmetics, textiles to medicine. Due to its labor-intensive and rare nature, saffron is considered by producers to be "worth the price of labor, and even a cheap healing herb."



"SAFFRON IS A NEW ABUNDANCE FOR THRACE"



Producer Ateş Kazımlı, who has been producing saffron for two years, said, "We are here for the harvest and we are getting the rewards of our labor. Saffron is used in many sectors, especially in gastronomy and the food industry. It is also preferred as a natural dye in the pharmaceutical, cosmetic, and textile sectors. It has calming, natural antidepressant properties," he said.



THOSE WHO HEAR THE PRICE SAY "NO WAY"



Kazımlı, who stated that they cultivate a total area of about 7 decares, said, "We have opened this place to the public; we want those who are interested to come and get to know saffron. Because it is still not well known in Thrace. In the first year, if you plant 100 kilos of bulbs, you will get about 400 grams of spice. In the second year, this yield doubles. This year, we expect to harvest between 2.5 and 3 kilograms from a total area of 7 decares. In the 2024-2025 period, the price was around 400,000 lira per kilogram, but this year it is expected to rise to between 500,000 and 600,000 lira. The price starts at 400 lira per gram. Quality is determined by the care taken during harvesting and drying," he stated.



"HANDMADE, NOT EXPENSIVE, ON THE CONTRARY, CHEAP"



Another grower, Tayfun Çakırlar, said, "We have been harvesting for two years. This year, we let the flowers sit a bit longer, and we are giving our guests the experience of harvesting. Normally, we pick them early in the morning every day. The price was 400,000 lira per kilogram, and now it has risen to between 500,000 and 600,000 lira. However, this is not a product consumed by the kilogram. Two threads are enough for a tea glass. Since it is a product that is picked one by one by hand, I don't think it is expensive; on the contrary, it can even be considered cheap," he said.
