The Ministry of Agriculture and Forestry has redefined the principles regarding the production and labeling of cream and clotted cream. With the new regulation, not only the types of milk to be used in the products are specified, but the labeling processes are also comprehensively regulated.

REGULATION ON "CREAM" FROM THE MINISTRY

The Ministry of Agriculture and Forestry has redefined the principles regarding the production of cream and clotted cream and the labeling of these products.

The "Turkish Food Codex Cream and Clotted Cream Regulation" prepared by the Ministry has been published in the Official Gazette and has come into effect.

According to this regulation, the products covered by the regulation will be obtained from cow, sheep, goat, or buffalo milk.

The lactic acid bacteria to be used in the production of fermented or sour cream must be present, alive, and active in the product until the expiration date. Cream and clotted cream registered as geographical indications will be offered to the market according to the characteristics specified in the geographical indication registration regulated under the Industrial Property Law, provided that they do not violate food legislation.

NO ANIMAL OR VEGETABLE OIL OTHER THAN MILK FAT

No animal fat or vegetable fat other than milk fat will be present in the products offered to the market under this regulation. No protein other than milk protein can be added to the products. In flavored processed creams, flavoring substances that may cause imitation and adulteration cannot be used, and in clotted cream products, direct flavoring substances cannot be used.

THE TERM "CREAM" CANNOT BE USED

With this regulation, the principles regarding the labeling of the products have also been re-regulated. Accordingly, the term "cream" cannot be included in the labeling, advertising, promotion, and presentation of products produced for similar purposes that fall outside the scope of the regulation.

The term "processed cream" cannot be used as the name of the food. In processed creams, the name of the food will be specified in accordance with the designations in the product characteristics.

FLAVORING SUBSTANCE WILL BE WRITTEN ON THE LABEL

The flavoring substance used in flavored processed creams and its percentage will be written in the main view area along with the name of the food. If enzymes are used in the production of fermented or sour cream, this enzyme will be specified in the ingredient list or below the ingredient list on the food label.

If the milk used in the production of cream and clotted cream belongs to a single type, the name of the type will be included along with the name of the food. Visuals of the animal type may be present on the label of these products. In cases where milk or creams from different animal types are mixed and used in the production of cream and clotted cream, the names of the types obtained may be found on the labels with expressions such as "produced from cow, sheep, goat, and buffalo milk or creams." However, visuals of types such as cow, sheep, goat, and buffalo cannot be included on the labels of these products.

The name of the food on the label of spreadable cream will be indicated using characters with a font size of at least 3 millimeters in height. Food businesses operating before the publication date of the regulation will comply with these provisions by December 31. Products produced before this date may remain on the market until the end of their shelf life.
