The new regulation aims to use at least 70% whole wheat flour in breads. The implementation will initially be carried out in the cafeterias of public institutions and will then spread nationwide.
TO BE SPREAD NATIONWIDE
The application, which was launched in public institutions in Konya, selected as a pilot province last August, is planned to be expanded to all of Turkey within a year. Initially, 80% of the bread in public institution cafeterias will be campaign bread; white bread and whole grain bread will be available in more limited quantities.
After a one-year implementation period, it is expected that the regulation will cover all bakeries and businesses across the country.

Research shows that the annual per capita bread consumption in Turkey has nearly reached 70 kilos. Authorities emphasize that the standardization to be made in bread due to this high consumption rate is of great importance for public health.
