As in the rest of the country, in Adana, the heads and trotters of the sacrificial animals slaughtered for the Eid al-Adha are processed at the hearth to be consumed as a remedy in winter. A team of 14 people, including blacksmith masters, became the masters of head and trotter ironing during the holiday in Kozan.

The masters started their intense head ironing work early in the morning and continued until midnight. The masters stated that approximately 200 heads and trotters are cleaned daily in an area where the air temperature exceeds 35 degrees and the hearth temperature approaches 100 degrees, saying that despite the hot weather, it is both difficult and laborious to continue their profession. It was learned that the daily wages of the masters at the hearths, where head and trotter ironing is done for an average of 500 TL, range between 3,500 and 4,000 TL.
"WE FEEL 100 DEGREES"
Head ironing master Ramazan Altuntaş stated that they have been working with an intense pace since the first day of the holiday, saying, "We only do this job for 3 days a year, but it is very challenging. The temperature in this room reaches 100 degrees. We start at 7 in the morning and continue until 1 at night."
Another head and trotter master, Mustafa Bolat, noted that the work continues throughout the Eid al-Adha. Bolat said, "We serve citizens who bring their heads and trotters to us during the holiday. We are a team of 14 people. We iron the heads over a wood fire in the heat. This challenging work lasts for 3 days. Our daily wage is between 3,500 and 4,000 TL, but enduring this heat is not easy."
"CONSUMED IN WINTER"
Şemşettin Balkız, one of the citizens who brought the head and trotter of the sacrificial animal, said, "We consume head and trotter soup in winter. We keep it for health purposes."
